How do you copy music from your computer to your iPod?

Can I copy music and files from my iPod Touch to my computer and still have it be organized in Windows?

• I recently had a computer crash and lost my organized My Music folder which held all my music. I was wondering if there is a program that can not only find the music on the touch and play it in iTunes, but recover the organized folders and files of the music that I had pre-crash. I know that the more important thing is having the music files to play, but I really hope there is something I can do to recover my folders for each artist/album. Thanks for your help.
