How to change iTunes account on iPod touch?

How do I change the iTunes account on my iPod Touch?

Okay so I just downloaded the iOS 4.0 update and ever since I've had issues with my brothers email showing up in my iPod Touch when I try to download new apps. I did download his apps using Home sharing (Yes I am aware that is illegal) before the update and I jailbroke it if that helps, But the computer I sync it to is logged in on my account but for some reason his account shows up on my iPod. What do I do?
