I don't know about the engineers but to be an Air Force pilot you have to be an officer, and to be an officer you have to have a degree. The kind of degree doesn't matter much but a degree in Aeronautics wouldn't hurt. There are some physical requirements like you cant be too tall or you wont fit in the cockpit, you'll have to be able to take the G forces and you have to have near perfect vision. Im looking into vision correction right now because I want to be a pilot too so if you have less than perfect vision look into PRK surgery from the Air Force, some civilian eye surgeries will disqualify you completely so watch out. You'll also have to show that your fit to be a pilot so you might want to go to the Air Force's website to get into more detail hope this helps.

As far as engineering degrees you would need any of the following: Aerospace, Mechanical, Aeronautical or Structural Engineering. As far as flying, you'd need to be certified as a test pilot. But you would be looking at thousands of hours of flight time to get to that point.
