Is it illegal to edit photos of celebrities, so that they're doing something else than what they were doing?

To be liable for defamation, you must be aware that the message is untrue, intend to defame the subject, and actually damage the subject's reputation as a result of the message. Most likely you will not be doing any actual damage to the reputation, and even if you do, if your intent is to entertain rather than to defame, you should be alright.

However if you are publishing it in any way shape or form, with intent to defame (damage the reputation of) said icon, then yes it is illegal.
