Legal action I can take against someone who will not give my property (birds, cages, equipment) back.?

Legal action to take to retrieve a pair of expensive parrots and 9 parrolets from a person that will not pay? Have a man that will not pay for or give my birds back to me. I met him at a bird show with his neighbor, together they did birds as a hobby. Found out he lived right on my Mother's street so have to pass there all the time. I have given him the chance to pay, make payments, trade whatever but it is a 3000.00 venture. For my pair of parrots and all the parrolets, cages and equipement. I had just bought all and had to move to my Mother's to help her since my Father had past. My Mother couldn't deal with the noise of the parrots so Joe said he would take them and decide how he wanted to do it. Gave him the opportunity to decide without a written contract only verbal. Thought he would be trust worthy. Called him at times ....always evasive. Stopped by only when I saw him out and he would make comments as you don't need the money..(various reasons he thought). Which has no relevance to purchasing my property! Time lapsed. Sent him text..with my number and address and request to make a decision. There were even babies and he sold them without telling me and we had decided until he paid for the birds that he would split baby income until he paid for the birds. So not only did he steal my birds, he is profiting from my property! I sent him a certified letter stating I needed closure that he needed to decide what he was doing and if he couldn't that I wanted my birds back! Had respected not to bother or harrass him, gave him ample time to do whatever. Options were given and he did call me and was very mad and appalled that I would send a certified letter. He appalled????!!! at me wanting my property or payment on. He was having a yard sale so stopped, when no one was there approached the subject hearing my parrots out in his back yard, he feels they are his. Will not give them back. Gave him a note that I wanted closure and either pay somehow or give them back. I told him I had respected him by trusting him, gave him so much time, options but enough!!! What are my options???

you HAVE NO OPTIONS! you were DUMB ENOUGH to trust him and got ripped off. you have no proof the birds and things were even yours! You want to be stupid, it doesn't come for free, there is a price to pay for the priveledge!!! WISE UP and STOP BEING STUPID! Chalk it up to an expensive LESSON!!
