How early can you season your thanksgiving turkey?

Will you get sick if you eat turkey out of season?

My son in law claims that you cannot eat turkeys out of season because they have parasites in there stomach and it will cause you to get sick is that true? I find it odd that you cannot if that is true? that is. See in NC turkey season does not start until april so I find that ridiculous too I mean April for turkey season! Seriously! Why can NC residents not have turkey season in November? And if Turkeys do have parasites in there stomach then why do we eat turkey at thanksgiving? That confuses me so if anyone can clarify what is true and untrue then thank you in advance :D Also if anyone knows why NC state does not allow hunting seaon for turkeys start until April I would also appreciate it thanks again :)
