GI discomfort: I need a diagnosis?

A friend of mine went to a 'holistic' doctor and was told she should stop eating wheat because of gluten sensitivity. Immediately after removing wheat from her diet, she developed persistent GI irregularities. Later tests with a nutritionist revealed that she didn't have a gluten sensitivity, but that she did have sensitivity to many foods. For months, she's removed lots of foods from her diet (list too long to go through) on the advice of said nutritionist. She's convinced that NOT eating wheat is causing these issues but I can't imagine that NOT eating it would cause these symtoms persistently because many cultures don't eat wheat at all. What could it be?

I've used every diet under the sun but nothing worked as effectively as colon cleanse. I realize they say that pills don't work, nevertheless they certainly worked for me, and they've been shown on CNN too.
