How to cook chilli sauce?

Everytime my bf cooks i have to scrub off burnt sauce, can he cook in such a way that burnt sauce won't happen?

  • this is how he cooks: 1. take meat 2. put on high fire 3. add vinegar and sauce 4. add more sauce as meat cooks, turn fire to medium high 5. scrapes burnt sauce off pan while cooking when i cook i don't leave burnt sauce trail behind me. but the meat comes out tasting different. i 1. always keep the fire on high 2. don't cook the meat for as long as he does is there anything he can change about his way of cooking so there is not burnt sauce (although the meat itself is not burnt) everytime?

    just dont cook it as high, geez. When I cook my meat, I do it on medium heat. and then let it sit and simmer for a while on med to med-low, adding water if necessary to keep the sauce from burning...

Here's the deal...why don't you let him cook it the way he cooks it all the time...and THEN let HIM scrub the pan thereafter. A few times of that routine and things are bound to change. Bottomline is the heat is way too high. The other thing you might want to do is to invest in a quality nonstick/ceramic skillet or when you are done cooking, fill the pan with hot water to loosen the burnt parts.

You're both cooking on too high heat. 'High' is for boiling water. 'Medium', 'medium-high', 'medium low' and 'low' are for cooking. Sauce should NEVER be added to a very hot pan; it will burn.

Make sauce....marianate meat (1 hour out of refrigerator or up to 24 hours in)..... pat meat dry.....cook meat.....prepare a fresh sauce if desired.
