Some suggestions of picnic foods for valentines day?

It is vital that the food is served cold, transports well and is not too messy to eat. I'd like to make my boyfriend a picnic lunch for Valentines day this year and am looking for some good ideas of what I could take. I will be travelling for 1.5+ hours, will have very limited fridge access and am unable to heat food. We are easy to please with food but, tend to favour ethnic or spicy foods. Also, I just bought some love heart moulds and would be nice to use them somehow :)

Bring along a travel package of hand wipes to clean up...then you don't have to worry about anything. Here's a great "to go" recipe for SPICY CHICKEN WINGS...easy to make, travels great for a picnic... Spicy Chicken Wings--Serves 12 (so adjust recipe accordingly) Ingredients 1 cup soy sauce 1/2 cup vegetable oil 2 packets fajita or taco seasoning 4 lbs chicken wings 1. In a bowl, combine you soy sauce, vegetable oil, and fajita packets and mix well. 2. Divide your chicken wings into two batches and place each on it a large zip lock bag. Pour half of your marinade over the chicken in each bag and place in the refrigerator to marinate for 4 hours, or over night. 3. Preheat oven to 375 º F. 4. Cover a baking sheet with aluminum foil, and spread your wings on the sheet in an even layer. Bake wings for 30-35 minutes and enjoy. (Just wrap in foil in a container and transport to the picnic) Here's something good to go with the wings... Corn Fritters - Serves 12 (again...adjust recipe accordingly for just the 2 of you) Ingredients 2 boxes Jiffy cornbread mix 2 cups sweet frozen corn, thawed 2 jalapenos, seeds removed and chopped 2 eggs 1 cup milk 6 green onions, chopped 4 cloves garlic, chopped ½ teaspoon cayenne pepper ½ teaspoon pepper 2/3 cup vegetable oil 1. Combine all ingredients, except for the oil, and mix well. 2. In a skillet over medium heat, heat the oil. Once the oil is hot, pour about 2 to 3 tablespoons of the corn mixture into the skillet, similar to making a pancake. 3. Repeat all the way around a skillet over medium heat, heat the oil. Cook fritters on one side until lightly browned, then flip, and continue to cook until the other side is golden brown. 4. Repeat with remaining batter. Place fritters on a paper towel to cool. ***These fritters are great served hot or at room temperature (again, wrap in foil and transport in a container). To be creative....why not make the corn fritters into hearts using a tin heart cookie cutter? (pour batter into mold and cook in frypan). For dessert...something sweet of course...cupcakes? decorations for them have endless possibilities. Bring a beverage of your choice...and all necessary supplies for picnic, including cloth napkins and handwipes.

You could make some paté in the moulds and take along some nice crusty bread to go with it. You could also take some "mini" scotch eggs and a mixed salad. I usually "spice" up my savoury "snacks" with a little crushed chilli which works well with the paté and also the sausage mix around the scotch egg. Samosa are easy to make and travel well, spicy veg samosa is great for picnics, and you could make some heart shape mini cakes for dessert. have a lovely picnic!

for your heart molds - buy frozen waffles - toast - let cool and cut your hearts - spread one side of each with strawberry cream cheese and add very thin slices of strawberries - make a sandwich with them as a dessert - sprinkle with powdered sugar spicey chicken wraps -( purchase a cold pack to pack your wraps in ) or purchase a hearty loaf of bread and make a pressed sandwich - (refrigerate over nite) use oiive oil, spicey meats, cheese, peppers,garlic,olives, roasted red pepper

Put a cooler in the car, stop at a deli and buy wraps, sandwiches, cole slaw, potato salad, drinks, and a bag of ice. Stop at a bakery and buy some heart shaped cookies. Bring a bottle of sparkling cider, and a couple of glasses. No muss, no fuss.
