  Because, when the A/C is operating, it depends upon the compressor to chill the air. The compressor is a belt-driven accessory off your engine, just like your power steering pump and alternator. Every belt-driven accessory you add robs a little more horsepower from the engine and thus, requires more throttle (and gas) to maintain a certain speed. When you hear the compressor "kick in", your fuel consumption goes up; when your car's interior reaches your desired temperature, the compressor "kicks out", and you don't use as much fuel. Many people then ask, "well then, why doesn't the heater cause more fuel use, too?" The answer is quite simple. The heater is really a "heat exchanger", by which the hot engine water is circulated through the heater core, under the dash, and a fan blows across it, forcing it to give up some of the stored heat as it passes through the heater core. The water pump on the front of the engine does all the work of circulating this hot water anyway, circulating the water throughout the engine to cool it, as the water passes back through the radiator.
