The structure of dehydroascorbic acid differs from taht of ascorbic acid in that the two OH groups on the five-membered ring have been oxidised to C=O groups. Dehydroascorbic acid undergoes spontaneous conversion to diketogulonic acid which is formed by the opening of the five-membered ring.
