Would it be best if in the star trek series to watch?

    It's not necessary. As long as you know what happened on any of the series or movies, then being in order doesn't really matter. In fact, the Enterprise being docked at DS9 does not mean you need to know what happened on TNG to know what's happening on DS9. Like knowing what happened on DS9 is not essential to know what is happening on Voyager even though Voyager was docked at DS9,

If you are planning on watching the whole universe of Star Trek, I don't think it matters. But you probably want to go back and forth anyway, because you're gonna see things that link up and go back to see where it matches. But that sounds like a good plan to me.
