    The best way to beat an opponent is just to pass around them. If that's not possible then you're going to have to dribble. When that's the situation i've found the most affective moves are just basic cuts. Run at them and cut one way or another, usually they'll miss time their steps and you can be gone before they realize what's happened. Other moves that are really useful are step overs (if you can do them really fast and smooth) or the fake shot, but that only works if you're near the goal (obviously). Good luck

You don't need to tackle them you just need to stop them from being able to run straight at the defence. It's still a defensive role but you get a much greater freedom to move without worrying about the gap you leave behind.

geet used to holding the ball on your foot. once you have mastered this, try moving your foot all around the ball (360 degrees) as quick as you can whilst the ball is in the air. this is called around the world. The worlds most famous trick. practis makes perfect. once you have mastered that it becomes easy to do the others.
