How can I make light and fluffy popcorn?

  • I do not really need to make popcorn, but in my chem class we recently did a lab where we had to determine the percent of water in the average popcorn kernel - the water is what makes the kernel become the popcorn that we actually eat. Now my question is ... what are two characteristics of a good quality kernel that would make light and fluffy popcorn when heated? Should it be a certain color? size? Please explain! How do you test a kernel to make sure it will make light and fluffy popcorn! Thanks :)

    All I know is to get fluffy popcorn is that the popcorn has to be very fresh and a bright yellow..but you don't see those much anymore..=)
