The Air bubbles in fondant icing?

Can you make fondant icing using these ingredients?

  • I need to make a good quality cake for a family occasion this evening, and I don't have any corn syrup??? I've read lots of recipes for fondant icing which includes: softened butter, corn syrup, vanilla, salt, icing sugar I've also read some which use gelatin, but some don't?? So I'm guessing it's an "optional" ingredient...?? Anyway, I looked it up, and it say that golden syrup can be used as a substitute for corn syrup... Is it the same in this case??? Basically, can you make fondant icing using ONLY these ingredients... butter, golden syrup, icing sugar, vanilla, salt Is that OK??? Do I have to add anything else?? I don't have any gelatin or corn syrup???# Please help!!!! Thanks xxx

    The gelatin is there to keep the entire mass stable and solid. It is not necessary for an experienced baker, which it sounds like you're not. It's "insurance" against too liquid a mixture, or sagging of the vertical pieces. (The liquid comes from the butter and from the air as sugar loves to soak up water.) Golden Syrup is a little sweeter than corn syrup, but should not effect the finished product. Make a batch, and if it you get sagging add a little more sugar to firm it up. Good luck.

I make fondant with marshmallows, water and powdered sugar. I sometimes use golden syrup to help with consistency. I substitute golden syrup for corn syrup all the time. It works very well. I don't use a lot of it, but when I use it, it works. I do this for fondant and for my homemade buttercream.
