Rice that has been previously cooked is best. Heat a tablespoon of olive oil in a skillet and stir-fry the rice until warm. Make a hole in the middle and break the eggs in the cleared spot. Add onions, peppers, bacon bits, sausage. ham, cheese, etc. Stir the eggs and fry, then go bigger and mix the rice in. I was in Japan and the restaurant served extremely hot rice and two raw eggs. You break the eggs into the rice and the heat soft cooked them. That's kind of risky however.

My husband makes something similar, although it's an egg-rice scramble. Just start making your scrambled eggs, and toss in last night's rice from dinner. (Buffalo chicken rice or black beans and rice work great.) Top with some cheese and you're done.
