Fish at the markets had big pink thing in its mouth. what was it?

I was at the fish markets and there were some fish (obviously) some had their mouths open, some closed. but there was on big fish that had some weird pink skin balloon thing in its mouth. it looked like part of the fish but the fish next to it didn't have the balloon thing in its mouth. what was it? it was attached to the fish, i poked it. it was flesh so it wasn't a balloon. any ideas? i see fish with this weird pink thing in their mouths on some fishing websites but i'm damned if i know what it is. links appreciated. thanks.

Maybe it's tongue? Or thick pink colored saliva. Or something which it ate probably came out.
