UK employment law - if you are given a pay rise over the telephone from Area manager, can the company then later claim it was a mistake and give you a pay cut and demand the overpaid money?

It seems to me that there are two pieces of available evidence; the telephone conversation is hearsay, but is corroborated by the fact that a pay rise was given. Take them to an Industrial Tribunal.
