I had a job interview last Wednesday, but unfortunately didn't get the job. Would the employer be grateful to tell me, if I asked, how to improve in future interviews?

Well, "grateful" isn't really the right word. "Willing" might be more like it - if they will even give up the time to do it. Hopefully you will get them on the phone for a 5-min conversation, where they can hit the high points. Good luck!

It may not have been the interview process that was the clincher. It may have been the overall experience and educational background that the chosen candidate had. So you could have given the best interview in the world and still not been selected. An employer will not tell you why the other person was chosen. If it's a big company, they probably won't tell you anything and would think you a bit odd for asking.
