How To Count Calories In Food?

I've been counting my calories for a few weeks now and several times my count has been under 1000, always under 1100. I'm pretty sure I count properly, but is there anything I could be leaving out? I count both food and drink. Also, are carbs fattening?

    This amount of calories is by far no where near enough..you either need to recheck what your eating and seek professional advice or increase what you eat before you develop an eating disorder..

To MAINTAIN my weight, I need to take in 1733 Calories/day. A fat loss diet for me would include 1387 Calories/day. Less than that, my body would go into starvation mode, and I wouldn't lose ANY Weight, because the body starts holding on to every calorie that it gets. That's not healthy.
