What are the differences between upscale bars and common bars?

What are the basic differences between cakes and cookies? Describe biscotti, lemon bars, and pressed cookies.

    Just off the top of my head ... the American version of cakes are generally bigger and fluffier than cookies - cookies can be alot of different things - crispy, crunchy, soft, large, small, white, brown, spicy (gingerbread), chocolate, flat, balls (Mexican wedding cookies), iced, not iced. Bar cookies are baked in a pan and sliced into squares or diamonds after they are cooked (think brownies). Biscotti are cooked twice (that's the "bi" part of the name - never made them so can't tell you any more than that). Not sure about pressed cookies. Have you check wikipedia? (I'm ready for dessert now!)
