Just off the top of my head ... the American version of cakes are generally bigger and fluffier than cookies - cookies can be alot of different things - crispy, crunchy, soft, large, small, white, brown, spicy (gingerbread), chocolate, flat, balls (Mexican wedding cookies), iced, not iced. Bar cookies are baked in a pan and sliced into squares or diamonds after they are cooked (think brownies). Biscotti are cooked twice (that's the "bi" part of the name - never made them so can't tell you any more than that). Not sure about pressed cookies. Have you check wikipedia?
