    Slow Roasted Leg of Lamb Serves 6. 1 4-pound leg of lamb 2 lemons, zested and juiced 3 tablespoons minced fresh oregano 3 tablespoons minced fresh thyme 1 tablespoon kosher 2 teaspoons freshly ground black pepper 2 – 3 tablespoons olive oil, 4-6 cloves of garlic – sliced into slivers 2 – 3 tablespoons fresh rosemary leaves In a small bowl, thoroughly combine lemon zest, thyme, oregano, salt, and pepper. Pat meat dry with paper towels. Brush lamb with lemon juice, then olive oil, then massage in herb/seasoning mixture. Using a thin paring knife, cut deep slits 1 inch apart all over the leg. Then stuff each slit with a sliver of garlic and rosemary leaf. (You can do this a day ibefore and keep refrigerated.) Let leg warm on kitchen counter for three hours. Heat oven to 275 degrees . Position leg on a rack in a roasting pan and roast until a meat thermometer reads 130 degrees for medium rare or 140 for medium (about 2 1/2 hours depending on your oven). Remove from oven. The roast will look gray and uninspiring. Tent with foil, and let rest for 15 minutes. Meanwhile, heat oven to it’s highest setting. Return roast to oven and cook until well-browned — 10 to 15 minutes. Now it will look beautiful and be packed with crusty flavor. Serve with braised fingerling potatoes and fresh peas with butter and more mint to complete a perfect spring dinner.

I see you mentioned you were thinking of having lamb. I would remove the bone and butterfly the lamb. in a shallow pan put some olive oil, a few tablespoons of lemon juice, some thyme, oregano or Rosemary. cover the lamb with the marinade and refrigerate overnight. Use saran wrap to cover the lamb in the frig. The next day light the BBQ grill and grill the butterflied lamb. It will cook much faster than a whole leg cooked in the oven and will taste really good. It will also be much easier to slice since the meat is flat and completely off the bone.

oops, I forgot to mention mince up some garlic to put in your marinade! one or two cloves depending on how much you like garlic.

This one looked good because you marinate it and then it should be easy to pop in the oven. We had artichokes last night and dipped them in butter and lemon. Made a nice appetizer if you find good, fresh srtichokes.
