    "Northern Spies make the best apple pies." They never become sludge in the pie; they retain the wedge shapes and are a hard apple so they have a subtle bite left after the pie is cooked. Really really traditional apple pie and great flavor. I used to wait and pick them myself and they store fantastically in a cellar. Depending on availability, I use at least two different kinds of apples, sometimes more. The ones we like in pie are Jonagold, Northern Spy, Rome Beauty, Cortland. Winesap, Baldwin or Jonathan. My secret ingredient: 1/4 of my "apples" are pears - Bartlett, Bosc or Anjou.

You're welome. I don't know if you can get them in your area. I can't in mine unless I bought them online. They grow as far north (that I know of) as Northern Virginia. I'm used to New England apples. I don't know why but apples grown in the south are not very good and terrible for pies. Macs are good for pies but stay away from Delicious.

It depends on how you like your apple pie. If you like them tart and intact, then granny smith apples. I, myself, prefer a sweeter, softer pie so I use a combination of macouns, macintosh and cortland.

Granny Smith is my choice and there is a recipe on Better Homes & Garden's website from their November or December issue called Alan's Apple pie that is to die for. I made it for Thanksgiving and got rave reviews, everyone demanded it for Christmas too.
