The "Nelson 56600 Shut-Off Water Timer" is designed for garden hoses, but would it (or similar) fit on a shower head?

No, the shower screw threads are MUCH smaller than the garden hose threads. But look for an adapter fitting, I'll bet someone (hardware store) has invented one.
