What should I get my mother for Christmas?

What do you think would be an appropriate Christmas gift to get your future mother-in-law?

I kind of have an idea of what she likes, but then I don't know if it would be okay to give those things to her for Christmas. Last year I got her a candle that matched the decor in her house, along with a little wind chime (which she collects). But this year, for some reason I went blank on what to get her. (She, my fiancé, his brother, and myself went to Disneyland this past Friday and she paid for everything, including food, souvenirs, etc. so I really feel I should get her something nice.) What do you think would make a nice gift?

I have no idea what she likes so I'd be at more of a disadvantage than you. Nor do I know your budget. Probably better to give us your ideas and ask opinions on those. She does sound like a very nice woman.
