I canned hot peppers in oil today for the first time ever and used fresh oregano and garlic in the jars. Is this ok?
-
By the way, I boiled the oil, vinegar and water before pouring it into the jars filled with the peppers, garlic and oregano. I then used a hot bath on the jars for 15 minutes.

Answer:
It will take 15 minutes if you are usin pint or 8 ounce jars and 20 minutes for quart jars. this is the time from when the water bath canner returns to a boil after putting your jars in. Also make sure you added more vinegar than oil, because peppers are a low acid veggie and more prone to bacteria.
