How do they know how different animals see?

I was watching TV and it was about how most animals can only see in 2-D and Black and White, I had a sudden thought, how do the scientists know that? Do they have animal contact lenses or something?

    The retina has two types of receptors, rods and cones. One of them (cones I seem to remember) is what discerns colour. Human retinas have a much higher proportion of cones. Other animals having a predominance of rods discern slight movements much better than do humans.
