Do you get the Xbox 360 and you recover your gamer tag on it, does all your gamer score and stuff come with it?

Recovering your X-Box 360 Gamertag does indeed include retaining your Gamerscore and achievements. However, saved game and system data does not get recovered with this, and unless you have this data backed up on a separate HDD, it will be lost.
