How does the quality of salmon sold in boxes compare to salmon from a fish market?
-
At my local store, I see wild alaskan salmon that's sold in shrink wrapped boxes that don't require refrigeration and have a shelf life of months. I'm curious if it compares favorably to farmed Atlantic salmon in terms of quality.

Answer:
The only freeze dried salmon I've seen are the cubes that I buy for my dog, so I'm not sure that's what they are. But if this boxed salmon is wild Alaskan salmon it's a hundred times better than the farmed kind which comprise 90% of the market here in the United States (80% worldwide). Instead of streaking through the ocean and leaping up rocky streams, farmed salmon spend three years circling in net-covered offshore pens and fattening up on pellets of salmon protein chow. They are vaccinated as fry against the diseases that run rampant through their pens, fed antibiotics to ward off infections and fed pesticides to shed bloodsucking sea lice. And for that rich pink hue they are given a steady diet of synthetic pigment. Without it, the flesh of these caged salmon would be an unappetizing, pale gray.

I can't be 100% sure because I haven't seen the boxes you are referring to, but based on your description of no refrigeration and multi-month shelf life, it sounds to me like it is smoked salmon. Smoked salmon is delicious. And, no matter how it's prepared, the quality and flavor of Wild Alaska salmon far outweighs the taste of farmed Atlantic salmon. I would say it even drastically outweighs the quality of wild Atlantic salmon. Really, there is no comparison between Alaska salmon and any other kind. ( http://www.savebristolbay.org )

If you really want the good stuff I highly recommend you try a Seattle or Alaska place and get the "fresh" smoked salmon. The stuff in boxes is just fine but gets packed with some mystery fluid. Try this place: http://jensenssmokehouse.com/ The price might seem a little high per pound but when you take out the weight of the water in the packs and in the increased quality of the product I highly recommend it!! Northwesterners consider good smoked salmon a birthright. I can't comment on Atlantic salmon since we really only eat local wild salmon. I hope this helps.
