    Without question these are the apps that made me want to jailbreak my iPad: Action Menu with Action Menu Plus Pack: adds actions to the action menu bar such as copy/cut/paste history and favorites so you don't have to type you name, email and address over and over, plus several other tools Iconoclasm (paid) with the 7x7 grid add-on: fit 49 icons per screen and it's fantastic. I'm now using the built-in but beta sliders to set the number of columns (10) and rows (6) Fullforce: forces iPhone resolution apps to display at iPad resolution; doesn't work with all apps but for those that do, it rules Maps Enhancer (offline caching of maps) MobileTerminal: for when you absolutely need a command-line SpringSorter: sorts your icons based on usage and can be constrained by page or sets of pages Scrobbl: the only http://Last.fm scrobbler that I've ever used that actually scrobbles everything and as songs get played SBSettings: add date, timeIP address and Wi-Fi SSID to your status bar SFTP/SSH access: Great for transferring videos and handling all sorts of administrivia Update: Shrink (paid): Allows you to shrink the size of the icons in SpringBoard, the Dock and the Switcher.  When used in combination with Iconoclasm (see above), I can now get 60 icons per screen (6 rows x10 cols in landscape) XBMC: This is isn't exactly true to the question as it isn't available through the default Cydia sources/repos - you have to add the http://mirrors.xbmc.org/apt/ios source and then you're good to go.  I have to say that after the Apple/VLC issues resulting in the removal of VLC, I am thrilled that XBMC was ported over because it really is a great product: playback of pretty much any video codec without transcoding, Network streaming, metadata scraping, TV show season flattening, add-ons, and so on...  Instructions here: http://wiki.xbmc.org/index.php?title=Install_XBMC_on_iPhone%2FiPad Thanks to for the tip on MultiIcon mover - simply awesome.

These are my biggest reasons for jailbreaking, both paid and unpaid - I don't recommend these for pre 3GS devices due to RAM limitations: The paid apps are only a few dollars and worth it for enhancing an already brilliant device. 1. Wi-Fi Sync (paid) - synchronize your phone to iTunes without the sync cable. 2. Synchronicity (paid)  - allows you to sync your phone in the background so you can continue doing what you want with the phone. These two in combination are great. I am buying a powermat so will probably never need the sync cable again. 3. SBSettings as Sandro says, saves many clicks doing routine tasks like toggling bluetooth/WiFi/3G and more. 4. Notified Pro with Notified Grip - iPhone notifications are intrusive and annoying at times - this makes growl-like notifications slide in from the top without stopping what you are doing. Fantastic. 5. MultiIcon mover - ever wish you could move more than one icon at a time when rearranging apps? 6. AirVideoEnabler and AllPlay - enables streaming from 3rd party apps to your apple TV or AirPlay enabled devices 7. MxTube - allows you to download youtube videos and watch offline
