What can I expect from graduating with a humanities/classics degree?

I am a great communicator, spoken or written. I enjoy public speaking. And in short, I know I am intelligent. But I don't want to sell myself short because I was naive in picking my major or anything (and I truly have much respect for those who love their chosen humanities major!).

There was a time when the answer to this question was so much simpler than it is today. For one, the whole culture has gone apeshit crazy for the practical majors: business, STEM, computing. This is partly due to the great scandal of unmatched tuition costs at most schools that still offer degrees in the humanities and/or classics. For another, the people who hire at most organizations now regard college as a trade school for getting students ready to perform as accountants, engineers, or marketers. There was a time, and I lived through it, when corporations hired talent. Like my English major, which showed I could probably think and surely write. The job itself they could teach me or anyone with my credentials. So, if you are still convinced that you want to go the route you suggest, you need to make sure you are doing it at a great school and that you have both the passion and talent to be able to take it through a PhD program or the wisdom to minor in one of those practical fields that lead to a job. There are many humanities graduates, for instance, in advertising. Otherwise, you stand a really good chance of being a very interesting bartender. Which the world also needs, by the way.

Anything you want to do. My uncle majored in sociology and had a career as a loan officer. He sold money to people. Too many students look at their major as some sort of map for their life. That's not what it is. It has the most impact on your first outing on the job market, but after that, no matter what your major was, your entire college experience will recede in importance compared to your work experience and network connections. Your college degree is just one rung on the ladder of life. You should look at the job or career field you want and figure out how college can place a rung a little closer to the next one, not college as the end-all-be-all that defines you. Ie: if you want to be a nurse, you have to get a nursing degree or certification, so college is an important rung. But if you want to work in the business world somehow, I'd approach the business or type of business you're interested in, talk to someone there, apply there or volunteer there and THEN see how your college experience can help you step up to that.

Bartending. Learn the business. Save money. Then open a bar. But in all seriousness there are a lot of opportunities that you don't see. First I really hope you're not in debt. Here's a secret: Find someone in an industry you want to work in and offer to work for free. They'll teach you everything that they know since you're not getting paid.
