Mentorship. To learn the nitty gritty of actually running a trial, you'll need a mentor to give you access to an undergoing trial. That's where you'll learn how to assemble a team, who needs to be contacted, how you choose your methodology amongst options, how it's actually monitored in practice, etc. Reading papers helps - especially the methods section - but only takes you so far.
