What are some helpful tips for building an applicant-portfolio for a visual communication degree program?

Im applying to several design schools and part of the admission process is presenting a portfolio. I would really love some tips if you have any!

I saw a portfolio once a long time ago. She had an album cover that she designed for a real band, she said she could pick a real or fake band and design a cover. She built little (I think it was paper mache) men and took a photo. There was a book cover. This was all done for her degree, not as an applicant. Sorry, it was at least 25 years ago and that's all I remember. It's a start though.
