Services like Amazon, Facebook, Twitter, Yelp, and Wikipedia change how users discover content on the web. Are each a serious threat to Bing/Google?

I posed the following questions to my wife today. Q: Where do you go to find information about a movie or actor? A: Internet Movie Database Q: Where do you go when you want to shop online? A: http://Amazon.com, they have the best reviews Q: Where do you go when you want to find someone, someone you might know? A: Facebook Q: When you want to eat out or find a new dentist? A: Yelp Q: When you want to learn about a city or historical event? A: Wikipedia Each of these services is grabbing as much structured data as they can around their area of expertise. It doesn't seem reasonable to expect that even if Google or Bing had access to the collective data set that they would be able to deliver as valuable experience to the target users. Do these companies pose a direct threat to the viability of the traditional search business? Do they reduce the importance of traditional search?

Yes, absolutely. Services are doing a better job of serving user needs than general search engines, so much so that people actually go there first without typing it into a search engine first (which says a lot given "Google" is a top search term on Yahoo). It's still very early. There's a lot more to come with information shared among friends and knowledge aggregated among experts.
