    Because Evernote and MediaWiki solve different problems. MediaWiki is for making a wiki. To share information that you have collected with the world, and in turn allow the world to edit that information. Evernote is so I can keep a shopping list for only my wife and I. So I can keep track of important processes I use at work. So I can keep reminders of things I need to do. Things I don't necessarily want the whole world to see. Additionally Evernote doesn't require a host.

Simply put, MediaWiki is a wiki. It's really not designed for as much personal information as I put in Evernote. Scanning in biz cards, photos of documents I want archived, shared files with my team (but nobody else) all of these are things we need a closed environment for. Wikis are great for public repositories, but that's not in competition with Evernote at all.
