How would you recommend learning gospel piano type chord variations on guitar?

    Adrian, I am not a total expert of the gospel style, but here goes. Lets say you are on an A7 chord. You can do small close position triads of F#- to E-.  That's the sound of "Freddie Freeloader" and many other blues tunes. Now do inversions of those triads, listen to them against A7.  Doing this first on a piano will greatly help your guitar knowledge. If you are not sure about how to find those, ask again and I'll get more specific.
