Aaron Hillegrass has released a new book: iPhone Programming. I would recommend that as well as Beginning iPhone Development from Apress. For a beginner "Cocoa Programming for Mac OS X" by Aaron Hillegass is a good book. But, frankly once you're up to speed with the basics, you should just refer to the Apple documentation, especially for iOS related stuff since that is changing so fast, Apple is really the only one who keeps up with that pace.
