There's a failure of perspective embedded in the question. There isn't a single large-scale manufacturing plant anywhere in the world that is fully powered by a single form of generation. Every form of generation is variable either predictably due to sunset or scheduled maintenance, or unpredictably due to weather tearing down transmission lines or technical failures. Nuclear only achieves 90% reliability of generation worldwide. Hydro is often in the 40% range due to low water on autumn. All major manufacturing concerns consider redundancy of generation and stability of supply, and many have significant co-generation investments as well. Asking the question is evidence of looking for a gotcha for wind energy just as the companion question on solar is a gotcha for solar. Wind energy manufacturing plants use the same mix as everyone else and contribute to making that mix cleaner and more carbon neutral and less polluting unlike coal mines and coal plants. Wind energy pays back the energy and materials 'debt' faster than any other type of generation. Coal constantly increases it's environmental deficit. Don't buy into the frame of the question. It's reductive and ignorant. The perfect is the enemy of the good.
