If my Apple Mail client is set to sync with Gmail using POP, how do I change it to sync using IMAP?

Creating a new account and deleting the new one apparently deletes all the existing messages currently downloaded to Mail.

Answer:
The messages being deleted is not a problem: they'll be re-downloaded to the device once IMAP is setup. You can set up IMAP first, then delete the POP account if you're concerned about not having messages on the phone.
