Why do some career fields have so many more unemployed than job openings, and why do others seem to have plenty of jobs available?

I am writing an article on how some fields are way too overcrowded and others have plenty of available jobs. I need specific information on why careers in the following fields are overcrowded: Professional and Business Services, Retail, Construction, Government, and Food Services. I need to know about specific jobs within these fields, such as market research analyst for business or carpenter for construction. If any expert, such as a career counselor or someone who works in one of these industries, can provide any information I can use, I would appreciate it. My company is a partner of Yahoo so any quotes might appear on a Yahoo partner site. I'd also like any expert's thoughts on why the following careers usually have many job openings: Registered Nurse, Accountant, General/Operations Manager, Software developer, Child care worker. Jobs with attractive salaries and benefits attract people. Current high school and college students see that members of a particular profession "make good money", so quite a few students decide to go into that career field. Eventually, too many people are vying for a limited number of jobs in a given career field, so some would-be employees find themselves unemployed. Other career fields seem to have plenty of job openings because they have not yet reached the point of having a surplus of potential employees. These jobs may require several years of education, they could be risky professions that few wish to pursue, or the jobs could require new skills (possibly involving computers, for example) that relatively few people have right now. Until a sufficient number of people move into these career fields, a surplus of job openings will exist

One reason could be awareness/knowledge. People who have a interest in these fields doesn't know that they are as fruitful as others. Second could be, there still exists high-low in the society. Engineering and all jobs are considered high profile jobs whereas child care and all jobs are considered low profile.
