What are the optimum UNIX file permissions I should set for various[1] web server files and directories?

[1] For direct-access files (e.g. profile.php), image storage directories which users shouldn't have direct access to but will serve images to direct access files (e.g. /siteimages, /css, etc.), backup tarballs which external users shouldn't have access at all, etc.,

I always set 644 for files and 755 for folders.
