I am on a 12 month contract at work. They have told me they wish to renew this but nothing has been signed yet. If I find another job before the contract ends and I haven't signed anything, can I just leave once my current contract is up or am I obliged to give some kind of notice?

I must clarify, I wouldn't leave it until the last minute to let them know but wasn't sure how long I could leave it that would still be considered proper. I'm based in the UK.

You probably don't "have to" but giving notice is the courteous thing to do. If you want to maintain connections for refences and networking purposes, you should do it.
