Why do so many soft drinks contain caffeine?

    Caffeine is a slightly physiologically addictive substance. It wakes you up and makes you alert. It creates an association between that good feeling, and the soda that contains the caffeine. Basically, your brain and body associates the soda with the drug it contains (nothing bad about this). Coke used to contain cocaine. Unfortunately for them, they had to replace the cocaine with caffeine. If you notice too, Diet Coke has around 90mg or so of caffeine per 20 oz, while regular sugared Coke has about half that much. This is because the sugar in regular coke gives you a short burst of energy that works alongside the caffeine. Diet Coke, on the other hand, can't give you that energy boost from sugar, so they bump up the caffeine content instead. You're right, you can make soda without it, but the caffeine probably helps with sales.

A majority of flavors including ginger ale, root beer, creme soda, orange soda, grape soda, etc, usually do not. Cola originally had caffeine from the cola nuts. People enjoy the caffeine due to it helping them stay awake(like they enjoy coffee), so they kept added it to other drinks. It's not that they can't make it without it (they often do), but people WANT caffeine. You can usually buy caffeine free versions of drinks like cola if you look for it.
