How do non profit organizations work?

Is it a good strategy to switch to job hunting with non-profit organizations if you do not have work authorization in US?

• I wish to try freelancing as a writer and web designer/developer but my past experience is in PeopleSoft so I definitely need to learn the new programming languages.Also, I am inclined to learn it by hands on experience than by a full-time degree. But my visa does not let me try volunteering for a new language and it is also difficult to be hired if you do not have experience in the required skillset. So, I am planning to switch to non-profit organization for sponsorship(not sure how to get this) and to learn better. Or rather should I utilize my time by pursuing a masters degree in C.S. and try H1b after that?Please advise.
