While traveling into rural Karnataka one can find a lot of 'Hindu Military Hotels' and most of them are non-vegetarian hotels. What is the story behind these hotels and what does Hindu Military stand for?

I always was under the impression that they were called military hotels because 1) they were opened by ex servicemen. There was a compulsion in the army to eat meat for even vegetarians. Most of these ex-soldiers (jawans) opened hotels from their cooking experience in the army. 2) Since at the time, casteism was at its height, HMHs were opened due to the overwhelming demand for non veg food by Hindus. A Hindu could safely eat at a Hindu MIlitary Hotel (HMH) and escape the stigma. Not least because of the positioning of the hotels (mostly outside of the main town area)

Hindu military  hotels follow a style of cooking from maharashtra  . It's basically the cooking styles followed by the armies of the maratha  empire ,as they cooked on their way to various expeditions ! I'm not exactly sure why the term hindu has been used but I think it's because of the time period when the Muslim invaders were in continuous  battle with the marathas  and religion was a main source to bring together people on both sides  ! It's widely seen spread across karnataka  specially in southern karnataka  .
