I'm writing this essay, and I'm using an example of Descartes and his interpretation of his three dreams. The ways of knowing are: emotion, perception, language and reason. I can't figure out whether he used reason, emotion, or another to interpret it..

Language can be solely a means of communication but without any substantive transfer of "knowing." Reason can be anything from informal pragmatism to highly structured logic and mathematics (or even mistaken thinking). Emotion has always been a slippery one to quantify. Perception is subject to many misconceptions or outright deception (witness stage magicians). Not much direct help here; good luck!
