I'm a freshman at an Institute of Technology. What are some promising STEM fields that I could really get excited about as a career path?

Since it seems like you're just looking for general "hot"things in STEM: I find CS extremely interesting because you can take two completely different paths with the skillsets you develop. You can join / create a  startup. You can become an academic If you want to go into the tech industry, probably the biggest thing is to have a drive to make a difference in the lives of those around you / the motivation to turn that idea into a physical product. As far as academia, here are some interesting (broad) topics (in my opinion). Remember that there are many interesting topics out there, and these days you're only limited by your imagination: AI and automation is already playing a huge role in the extension of the human capabilities. I find the notion of and "teaching" inanimate things extremely interesting. With the massive computational power available to us, it's possible to model complex biological processes and develop remedies to disease through this work. The human race is currently generating ~2 zettabytes of data per year. As a multitude of new data (in new forms) is collected, technologies need to be developed to efficiently manipulate and derive useful information from this massive repository in a reasonable amount of time. This is also linked to machine learning, as AI can often see patterns that we cannot.

If you let others make the choice for you, you will blame them for the rest of your life. Choose your path, whatever it may be, just because you majored in it doesn't mean it has to be your career. How good exactly are you at math, chemistry, and physics, and how much do they interest you? Biomedical engineering requires a lot of all three; chemical engineering requires a lot of math and chemistry, but not as much physics; electrical engineering requires little chemistry; mechanical engineering requires some of all three (but not as much as a BME major); etc. Look up your school's curricula for all the majors and see what's involved. How are you at computer programming or CAD (and do those interest you at all)? You say you're not interested in pursuing a major just because you're talented in that field, but if you really don't have any preference, it makes more sense to go with something you're good at than something you'll struggle with the whole way through, imo. I'm a mechanical engineering technology major, for what it's worth.
