No. It would be a very serious crime for the officer to do this and they would get in serious trouble when they were caught. Also, in most jurisdictions an ordinary officer wouldn't be able to alter the criminal records database anyway- at the very least, he'd need someone who worked in criminal records to do this, and even then, the way they are set up, there may be other safeguards as well (e.g. in my state the courts have their own records separate from the police, and differences between the two can be detected).
