How to prepare raw fish for sushi?

    Wofie By definition both sushi an sashimi are made with raw fish. The fish used is "Sushi Grade". Not supermarket or even fish market quality unless it is specifically labeled "Sushi Grade". Very expensive! Fish for Sushi and Sashimi are graded by the buyers and are usually sold to restaurants. I live in south Louisiana. My husband fishes. He will occasionally deep sea fish and come home with tuna and red snapper. Just because it slept in the ocean the night before does not mean that it is Sushi Grade. Any fish that has been frozen is not suitable for Sushi. A good Sushi restaurant never keeps fish more than 3 days and NEVER serves frozen fish. If you can fin a reputable fish market that carries Sushi Grade fish you can try making your own. Otherwise eat out. Don't play around with raw fish. Good luck

I wouldn't make sushi from any supermarket fish, you don't have any idea how old it is, frozen or not. I go to an Asian fish market and tell the clerk I want fish for sushi. Pack it in ice, take it home, slice it the way you like and make the sushi.

Most sushi is made with cooked fish. What you're thinking of is sashimi, which should only be made with sashimi grade fish. This has to be purchased from a reputable Asian fish market. It will be very expensive. Never eat supermarket fish raw; it could contain parasites or contaminants. Google some recipes for sushi. You can make it with vegetables, cooked shrimp, whatever, but NOT raw fish.
