The relativistic kinetic energy creates (converts to) short lived sub-atomic particles. This is why the LHC was built. The larger the accelerator the more energy can be transferred to the protons or neutrons so that there is enough energy to make the more elusive particles like the Higgs Boson and hopefully Gravitons (don't convert to matter but a messenger particle that disappears from the energy balance, hopefully ).
